In between the sprout and the baby green stage, microgreens are mostly succulent baby plants that contain more nutrients and taste better than their mature counterparts. Microgreens can be grown from a variety of seeds, ranging from broccoli to radish to quinoa to melons.

As a seedling, it is merely sprouted, the first stage of plant growth, unlike microgreens that have true leaves. All sprouts need is light and nutrition to grow. Sprouts do not need any light whatsoever to germinate and grow. Also, microgreens are usually harvested at the stem, whereas big greens are harvested from the roots.
